1 c butter
1/2 c powder sugar
1 tsp vanilla
2 1/4 c flour
1/4 tsp salt
3/4 c finely chopped nuts

Directions:

Bake at 400

1. Cream butter and sugar
2. Add vanilla, flour, salt and mix well
3. Mix in nuts
4. Scoop with a teaspoon and roll into a log shape. Place on cookie sheet. Bake until firm to touch.
5. When cool to touch but still warm roll in powder sugar. Later roll the cookies again in powder sugar.
6. Keep in a tight container until serving time.

Mom used to make these at Christmas and always stored them in her roasting pan and a sealed tupperware container in the basement pantry. Over the years, I have heard these called Mexican Wedding Cakes.
