2/3 c shortening
3/4 c white sugar
1 egg
1/2 c orange juice
2 tbsp grated orange rind
2 c flour
1/2 tsp baking powder
1/2 tsp soda
1/2 tsp salt

Directions:
Directions:
Bake 350
1. Cream shortening and sugar. Add the egg and beat in.
2. Sift together flour,baking powder, soda and salt.
3. Mix in the orange rind.
4. Add the dry ingredients alternating with the orange juice until well mix.
5. Bake on a cookie sheet.
6. Frost with a orange butter icing when cool.

Icing: powder sugar, butter and orange juice
Cream 2 tbsp butter with 1/2 c powder sugar. Add a tbsp of orange juice and mix well. Continue to add powder sugar and juice until you have semi thick consistency and about two cups of icing. The key is to beat it until it is smooth.
