1 cups dried apricots, chopped
½ cup boiling water
1 cup rolled oats
1 cup unbleached all-purpose flour, sifted
½ cup oat bran
½ cup soft brown sugar
½ cup chopped walnuts
½ tsp baking powder
½ tsp ground cinnamon
½ tsp ground nutmeg
2 egg whites
3 Tablespoons olive oil

Directions:
Directions:
Preheat the oven to 350. Lightly grease two baking sheets. Put the apricots in a bowl; pour over the boiling water and leave to soak for 10 minutes. Allow the mixture to cool.

Combine the oats, flour, oat bran, sugar, walnuts, baking powder and spices in large bowl.

Beat the egg whites until stiff peaks form, fold into the cooled apricot mixture, then add the oil. Mix into the dry ingredients.

Drop spoonfuls of the mixture onto the prepared trays, and then bake for 12-15 minutes, or until light brown. Leave for 5 minutes before lifting off the tray and place on wire rack to cool.
