1&1/2 lb breakfast sausage
2 cups sliced mushrooms
1/2 cup finely chopped onion
4 large eggs, beaten
2 cups milk
1 large day old Italian bread cut into 18-20 slices, crusts removed (butter optional)

Directions:
Directions:
Brown the sausage for 5 minutes breaking up with a fork as it cooks.
Add the mushrooms and onions and cook for 5 minutes, stirring frequently.  

Combine the eggs and milk.

Butter a 2 1/2 quart casserole dish and place a layer of bread on the bottom. Top with half the sausage and 1/3 of the cheese. Repeat with another layer of bread, the remaining sausage and 1/3 of the cheese. Cover with a third layer of bread.   

Slowly pour the milk and egg mixture over the strata and top with the remaining cheese.  Let the strata sit for one hour or up to 24 hours. 

Preheat the oven to 350 degrees.

Set a baking sheet on the lowest rack of the oven to catch any drips and bake the strata until the top is browned and bubble, about one hour.
