1 c Cut green beans
1 c Peas
1 c Sliced carrots
1/2 Head cauliflower, cut into
Flowerets
Boiling water
1/2 c Mushrooms, sliced
½ c Aspargus (White)
2 tb Butter
2 tb Flour
1 c Hot milk
2 Egg yolks,beaten
1/4 ts Salt
1/4 ts Black pepper

Directions:
Directions:
Cook vegetables except mushrooms and aspargus in small amount of boiling salted
water for 35 minutes (use 1/2 teaspoon salt per quart of water).
Drain. Saute mushrooms in butter. Blend in flour. Brown. Add milk.
Cook, stirring, until thickened. Add a little of hot sauce to egg
yolks. Return egg yolks to remaining sauce. cook. Stirring for 1
minute. Add seasonings. Combine vegetables and sauce. Mix .
