3 c. all-purpose flour
1 tsp. salt
1 tsp. baking powder
1/4 tsp. baking soda
1 cup granulated sugar
1/2 cup egg substitute
1/3 cup canola oil
1 T. grated orange rind
1 T. fresh orange juice
2 cups shredded zucchini
1/2 cup chopped walnuts

Directions:
Directions:
Preheat over to 350º. Combine flour and next 3 ingredients in a large bowl. Make a well in the center of the dry ingredients. Combine sugar and next 4 ingredients in a small bowl. Add liquids to the flour mixture, stirring just until moist. The batter will be the consistency of cookie dough. Fold in zucchini and nuts. Divide batter between 2 loaf pans coated with cooking spray. Bake at 350º for 50 minutes.

Glaze:
1/2 cup powdered sugar
2 tbsp. fresh orange juice
To prepare glaze, combine powdered sugar and juice, stirring with a whisk. Drizzle over cool loafs.
