1 tblsp unsalted butter
2 ounces salt pork, finely chopped
2 pounds beef round of chuck, cut in 1 inch cubes
Salt, freshly ground pepper
3 medium red potatoes, cut in 1 ½ inch pieces
2 medium green bell peppers cut in 1 inch pieces
2 medium onions diced
1 ¼ cups chicken broth
¼ cup dry white wine
3 tblsp tomato paste
4 tsp Hungarian paprika
½ cup sour cream, Reduced-fat or regular
1 ½ tsp caraway seeds

Directions:
Directions:
1. Melt butter in large, heavy Dutch oven over medium heat. Add salt pork: cook until browned. Pat beef dry. Add half to pan and season with salt and pepper. Cook over high heat until well browned on all sides. Remove and set aside. Add remaining beef, season lightly and brown well.
2. Return all meat to pan. Add potatoes, bell peppers, onions and broth. Stir together wine, tomato paste and paprika in small bowl. Add to pan. Cover simmer gently until meat is tender 1 ½ to 2 hors. Remove from heat. Stir in sour cream and caraway adjust seasoning.
