1 1/2 cups vegetable oil
2 cups granulated sugar
3 eggs, well beaten
2 tsp vanilla extract
3 cups plain all-purpose flour
1 tsp baking soda
1 tsp salt
2 tsp ground cinnamon
1 cup chopped pecans
3 large Granny Smith apples, peeled, cored, and diced
ICING:
1 cup granulated sugar
1/4 cup evaporated milk
1 stick margarine or butter (1/2 cup)
1 tsp vanilla extract

Directions:
Directions:
Preheat oven to 350º. Grease and flour a tube pan or bundt pan.
In a large bowl of an electric mixer, combine the oil, sugar and eggs. Beat on medium speed until well combined. In a medium bowl, sift together the flour, soda, salt and cinnamon. Add flour mixture to oil and sugar mixture and mix on low speed until combined. Fold in pecans and apples. Pour into prepared pan and bake for about 1 hour, or until tester inserted into center comes out clean.
When done, remove from oven and cool on a wire rack.
ICING:
Combine the sugar, milk and butter or margarine in a medium saucepan over medium heat. Bring to a boil and cook about 3 minutes, stirring constantly. Remove from heat and add vanilla. Beat until cool enough to spread, 10 to 12 minutes. Spread icing on top of cake and let drip down sides.
