1 Cup soften butter
1 Cup granulated sugar
2 eggs
1 tsp grated lemon rind
3 cups sifted flour
½ tsp salt

Colored sugar and or silver dragees

Directions:
Directions:
Cream butter and sugar until light and fluffy. Add 1 whole egg and 1 egg yolk. Blend thoroughly.
Add lemon rind. Sift in flour and salt. Gradually work into butter mixture using a spoon. As dough stiffens work flour into hands until dough is smoothly blended and set aside enough to roll. Wrap dough in waxed paper and chill for several hours or overnight.

Roll only a portion of the dough at a time keeping the remainder in the refrigerator. Roll to ¼ inch thick , cut out cookie shapes with cookie cutter and place on ungreased cookie sheet. Decorate with colored sugar or dragees as desired.
Bake at 375º for 8 Minutes
Remove from cookie sheets and cool on wire racks.
