2-8 oz. fresh or frozen salmon steaks, cut 1" thick
1/4 c. sour cream
1/4 c. mayo
1/4 c. sliced green onion
1 tsp. lemon juice
1/4 tsp. salt
Dash ground red pepper
1/4 c. shredded cheddar cheese

Thaw salmon, if frozen. Place salmon steaks flat on cutting surface. Halve steaks lengthwise, perpendicular to cutting surface, removing center bones. Place the 4 pieces of salmon in a 10x6x2" baking dish. Bake uncovered in a 450 over for 12-15 minutes or just till fish flakes easily with fork.

Meanwhile, in small bowl combine sour cream, mayo, green onion, lemon juice, salt and red pepper. Spoon over salmon; sprinkle cheese on top. Bake for 3-4 minutes more or til sauce is just heated through. Makes 4 servings.
