SALMON (Spicy Honey Glazed)
1/4 c. honey
1 tsp. grated lemon zest
1 T. lemon juice
1-1/2 tsp. hot sauce
4 6oz. salmon fillets
¾ tsp. salt
½ c. sliced scallions

Heat a large heavy bottomed skillet over medium high heat. Stir together honey, lemon zest, lemon juice and ½ tsp. of the hot sauce in a small bowl, set aside.

Place salmon on a large shallow dish, coat with remaining hot sauce, and sprinkle with salt. Place salmon in skillet and cook until well browned on both sides but still opaque in the center, 8 minutes, turning once. Remove from skillet and keep warm.

Add honey mixture to skillet and cook until just heated through, 30 seconds; remove skillet from heat and stir in scallions. Drizzle glaze over salmon. Makes 4 servings.
