For the chicken

1 tablespoon brown sugar
2 1/2 tablespoons soy sauce
2 teaspoons minced fresh ginger
1 teaspoon grated lime zest (optional)
1/4 teaspoon crushed red pepper
2 garlic cloves, minced
16 ounces boneless/skinless chicken breasts, cut into strips

For the sauce

1 tablespoon brown sugar
1 1/2 tablespoons soy sauce
1 tablespoon fresh lime juice
2 tablespoons natural peanut butter
1/4 teaspoon crushed red pepper
1 garlic clove, minced

Directions:
Directions:
Prepare grill.

To prepare the chicken:
In a medium bowl, stir together brown sugar, soy sauce, ginger, zest, red pepper and garlic - add chicken and toss together. Set aside and let sit for 15 minutes.

To make the sauce:
In a medium bowl, whisk together brown sugar, soy sauce, lime juice, peanut butter, red pepper and garlic.

Thread chicken onto skewers - place chicken on the grill and cook about 5 minutes on each side or until chicken is done. Serve with the peanut sauce.

Makes about 2 to 4 servings.

This is a fabulous recipe and can be served as either and entree or a party appetizer. It's very simple to make, and I often have all of the ingredients on hand. I never bother to put the chicken on skewers-- I just stick the strips directly onto my Forman grill and choose to double the recipe for the dipping sauce.
