2 T. oil
3/4# pork, thinly sliced
2 carrots thinly bias sliced (1 c.)
1 medium red/green pepper cut into 1" pieces
1 stalk celery, thinly bias sliced
1 medium onion, sliced and separated into rings
1-15 oz. garbanzo beans drained
1 recipe peanut butter sauce

Directions:
In wok, heat 1 T. oil. Stir fry pork 3 minutes. Remove. Add remaining oil, carrots, pepper, celery and onion to wok; stir fry for 1 minute or until veggies are tender. Return pork to wok. Stir peanut butter sauce; add to the wok. Cook and stir until mixture is thickened and bubbly.
Peanut Butter Sauce:
Stir together 3 T. water, 2 T. creamy peanut butter, 2 T. soy and 1 T. cornstarch.
