2# ground beef
1 can (12 oz.) tomato paste
2 pkgs. enchilada sauce mix
1 can (16 oz.) refried beans, warmed so they spread easily
1 pkg. (10 count) large flour tortillas
2 pkgs. (10 oz.) shredded cheddar or Colby cheese
Garlic powder, salt, pepper to taste
Taco sauce, chopped onion, chopped chili peppers, sour cream and guacamole

Brown beef and drain. Mix tomato paste and enchilada sauce mix according to directions on back of sauce mix package. Then add half of enchilada sauce to beef and simmer 15-20 minutes. Add garlic powder, salt and pepper, if desired.

Spray 9x13 pan and spread about ½ of the remaining enchilada sauce on bottom of pan. Lay 3 tortillas on top tearing them to conform to the pan. Spoon half meat mixture on another layer of tortillas, then spread on warmed refried beans. Spoon the rest of the meat on top of the beans and add another 1/3 of cheese. Add one more layer of tortillas and pour remaining sauce on the top, finish with the remaining cheese.

Bake 30-45 minutes. Let stand 10 minutes before cutting. Top with taco sauce, onion, chili peppers, sour cream, etc.
