3/4 c. of cooking oil
1/4 c. red wine vinegar
2 T. Dijon mustard
1/2 tsp. garlic powder
1/4 tsp. rosemary leaves, crushed
1/4 tsp. salt
1/8 tsp. ground black pepper
1# boneless skinless chicken breasts, cut into 1-1/2" pieces
2 green peppers cut into 1-1/2" squares
1 large onion, cut into 1-1/2" wedges
Optional: Salad tomatoes or mushrooms

To prepare marinate combine in a large bowl cooking oil, wine vinegar, mustard, garlic powder, rosemary, salt and pepper; mix well. Add chicken, mix to coat completely. Cover and refrigerate at least one hour (can be up to 24 hours. On skewers alternately place chicken with green peppers and onion pieces.
