4 Portabella mushroom caps
Roasted red peppers
Mozarella cheese or goat cheese
Spinach leaves
Balsamic vinegar
Your favorite bread or oversized buns

Directions:
Directions:
Remove the stem from the mushroom and wash the cap. Soak the portabella mushroom in balsamic vinegar until the mushroom soaks it up. It will soak it up very fast so you don't have to use too much. Grill or cook the mushroom in a skillet until done (takes less than 5 minutes). Place the cheese on the hot mushroom and put on lightly toasted bread. Top with roasted red peppers and cheese. Top with spinach and enjoy.
