1 pkg. fresh spinach
½ to ¾ c. olive oil, divided
1-2 cloves garlic, peeled and minced
½ medium onion, finely chopped
1/3 c. vinegar (half balsamic and half apple cider vinegar)
1 tsp. lemon juice
3 T. red wine
1 tsp. sugar
Dash Worcestershire sauce
2 dashes Tabasco sauce
¾ pound cooked turkey, cubed
1 jar (2 oz.) sliced pimentos, drained
1 T. toasted pine nuts
¼ c. freshly grated Romano cheese

Wash and stem spinach, set aside.

In a large skillet, add half the amount of olive oil. Add garlic and onion and sauté over medium heat until onion is translucent. Slowly add vinegar, lemon juice and wine. Simmer, uncovered, until mixture is reduced by 1/3. Add remaining oil, sugar, Worcestershire and Tabasco sauces. Simmer, uncovered for 5-7 minutes. Stir in turkey. Lay a bed of spinach on serving plate and pour warm dressing mixture over spinach until top layer is lightly coated. Garnish with pimentos, pinenuts and Romano cheese.
