4-6 chicken breasts uncooked to taste, salt; pwd. ginger to taste.
1/4 c. sesame seeds
1/3 c. toasted or slivered almonds
1 pkg (6-3/4 oz.) rice sticks
1 head lettuce
3-6 green onions sliced thin.

Sprinkle chicken w/salt and ginger. Bake in foil 350-1 hour. Cool, debone and cut into small strips. Roast sesame seeds and almonds til golden in 350 oven about 15 minutes.

Large bowl combine: lettuce, onion, almonds, sesame seeds, and chicken w/rice sticks.

Dressing: 4 T. vinegar, 4 T. sugar, 2 t. salt, 1 tsp MSG (accent), 1/4 t. pepper. I usually double my dressing.

I think this was Aunt Leta's recipe, but has since become a favorite in our family! Who doesn't love Chinese Chicken Salad?
