Crust:


1 c. Raw Macadamia nuts

1 c. Shredded Coconut

1 tsp Lime Zest

2-4 Tbsp Agave Nectar

Pinch of Salt

Filling:


1 c. Raw Cashews

2 c. Fresh Strawberries, chopped

¼ c. Agave Nectar

1 oz. Coconut Oil

1 tbsp Lemon Juice

Pinch of salt

Directions:
Directions:
Blend all ingredients for crust in food processor until well combined. Press into bottom of pan. Freeze crust until filling is made.

Blend all ingredients for filling in blender until smooth. Pour into chilled crust. Refrigerate for at least 4 hours before serving.

This sounds a bit out there, but I promise it is delish!! It is also much healthier than traditional cheesecake... no animal products :)
