8-10 zucchini, grated
3-4 shallots minced

For Lemon Pesto
Juice and zest of 2 lemons
a big handful of basil leaves
5-6 cloves of garlic
3 tablespoons toasted pine nuts
1/4 cup olive oil
salt and pepper to taste
3 tablespoons of Parmigianino

Steam the grated zucchini and onions until they are just done. Squeeze out some of the liquid from the zucchini.
In a food processor, combine all the ingredients for the pesto and blend well, working in the cheese at the end. combine with the vegetables in the sauce pan and heat though.
