1 c. heavy whipping cream
1 t. vanilla
2 T sugar
1 package chocolate wafer cookies

Directions:
Directions:
Whip the cream until soft peaks form. Whip in vanilla and sugar. Spread a little whipped cream between each of the chocolate wafers, making stacks of about 8 cookies. Put the stacks on a plate and put them in the freezer for 30 minutes or longer. Lay the stacks end to end until the form a single log on aluminum foil. Use the remainder of the whipped cream to frost the outside of the log and wrap it in the foil. Freeze for at least 1 hour.

When ready to serve, cut the log on a diagonal and allow to sit at room temperature 10 minutes before serving.
