1 lb ground beef
3/4 cup chopped onion
3/4 cup carrots
3/4 cup diced celery
1 tsp dried basil
1 tsp dried parsley
4 tbsp butter (divided)
3 cups chicken broth
4 cups diced potatoes
1/4 cup flour
1/2 lb American cheese
1 1/2 cup milk
3/4 tsp salt
1/2 tsp pepper
1/2 cup sour cream

Directions:
Directions:
In a larger 3+ quart pan, saute beef and onions. Remove and set aside. In the same pan saute carrots, celery, basil and parsley with 1 tbsp of butter until tender. Add chicken brother, potato and beef/onion mixture. Bring to a boil. Reduce heat, cover and simmer 10-12 minutes or until potatoes are done.

Meanwhile, in a small skillet, melt the rest of the butter, add flour and cook and stir 2 minutes or until bubbly. Add to soup and bring to a boil. Cook and stir soup until boiling and thick. Reduce heat to low. Add cheese, milk, salt and pepper. Cook and stir until cheese melts. (DO NOT BOIL). Remove from heat and blend in sour cream.
