1-2 T. cracked black pepper
2 tsp. garlic salt
3# boneless pork loin roast

FOR THE CHERRY SALSA
1/3 c. EACH: chopped onion, green pepper, green chilies
1/3 c. EACH: dried cherries, chopped, and red cherry jam
1-1/2 T. EACH: vinegar and chopped cilantro

Combine salsa ingredients; mix well. Cover and chill several hours or overnight.

Rub pepper and garlic salt into pork roast. Place pork in a shallow pan; roast in 350 oven for 1 hour, or until internal temperature reaches 155 degrees or 160 degrees. Slice and serve with cherry salsa
