5 cups strawberries, cleaned and hulled
3 tbsp. cornstarch
1 cup sugar
2 tablespoons lemon juice
1 baked 9-inch pie shell
1 cup heavy cream
2 tbsp. confectioners' sugar

Directions:
Directions:
Divide the strawberries into two piles. Slice in half the berries in one pile. Crush the remaining berries with a fork. Put the crushed strawberries in a heavy-bottomed pan and stir in the cornstarch, sugar, and lemon juice. Cook over low heat, stirring constantly, until the mixture looks clear or translucent and is thickened. Remove from the heat and cool. Gently stir in the sliced strawberries. Put the strawberry mixture into a baked crust. Just before serving, whip the cream with the confectioners' sugar and spread over the pie. Refrigerate any pie that is left over.
