Broccoli Cheese Soup Recipe

2 tbsp finely chopped onion
2 tbsp butter
2 tbsp flour
1/2 tsp salt
1/8 tsp pepper
2 c milk
1 c shredded American cheese or velveeta
2 chicken boullion cubes
1 1/2 c water
10 oz pkg frozen broccoli chopped

In large saucepan cook onion in butter until tender. Stir in flour, salt & pepper. Blend well. Add milk & cook until thick, stirring constantly. Add cheese and stir until melted. Remove from heat.
In medium pan, dissolve boullion cubes in water. Bring to a boil, add broccoli & cook accordingly. Drain. Add broccoli & liquid to cheese mixture. Stir to blend well.
Top with cheese.
