1 c all purpose flour
1/2 tsp baking powder
1 c rolled oats
1 stick plus 1 Tbsp soft butter
1/2 c dark brown sugar
1/2 c superfine sugar
1 egg
1/2 tsp vanilla extract
1/2 c dried cranberries
1/2 c roughly chopped pecans
3/4 c white chocolate chips

Directions:
Directions:
Preheat oven to 350º. Combine flour, baking powder and oats in a bowl. In another bowl, beat together butter and sugars with an electric mixer until creamy. Add egg and vanilla. Beat in dry ingredients, then fold in cranberries, pecans and chips. Roll tablespoon-fulls of dough into balls and place on a baking sheet lined with tinfoil. Flatten each ball with a fork. Bake for 15 minutes or until golden brown. Let cool on a rack.
