2 potatoes, peeled, cubed
2 T. margarine
1 large onion, thinly sliced
1 large red pepper, thinly sliced
1 zucchini, diced into 1/4" pieces
1 pkgs (5 oz.) garlic and herb semisoft cheese, crumbled
8 large eggs
1/2 tsp. freshly ground black pepper
1/4 tsp. salt

In boiling water, cook potatoes until done. Drain.

Melt butter over medium heat. Sauté onion 5 minutes, until soft; add all vegetables. Sauté until crisp tender; add cheese.

In bowl, whisk eggs, pepper and salt. Pour over vegetables; cook until edges set. Lift eggs with spatula; tilt pan so uncooked eggs run under cooked portion. Lift eggs and shake pan frequently.

Broil 4" from heat source 2 minutes or until set; slide onto serving platter.
