1 c. butter, melted
1/2 c. xxx sugar, plus extra for sprinkling
2 c. plus 3 T. flour (divided use)
4 eggs
2 c. sugar
1 tsp. baking powder
1/3 c. fresh lemon juice
Pinch salt
1-1/2 c. unsweetened grated coconut (available at health food stores)

Directions:
Preheat oven to 350. For crust, mix melted butter, xxx sugar and 2 cups flour; press into the bottom of a greased 10x15" jellyroll pan. Bake for 20 minutes of until lightly browned. While the crust is baking, prepare the filling. Beat eggs with the sugar, then add 3 T. flour, baking powder, lemon juice and salt. Stir in coconut and pour over the browned crust. Bake for 25-30 minutes more or until set and lightly browned. Cool, cut into 2" squares and sprinkle with xxxx sugar. Makes 35 bars.
