1 yellow cake mix
1 pkg. instant vanilla pudding
1-1/3 c. water
4 eggs
1/4 c. oil

Beat medium speed 4 minutes. Then stir in 2 c. coconut and 1 c. nuts. Pour in greased and floured 9" layer pans. Bake 350-35 minutes. Cool in pans 15 minutes; remove, cool, fill & top w/coconut cream cheese icing.

4 T. margarine
2 c. coconut
8 oz. cream cheese
2 t. milk
3-1/2 c. xx sugar
1/2 t. vanilla

Melt 2 T. margarine in skillet. Add coconut and stir constantly over low heat til golden. Spread coconut on paper to cool. Cream 2 T. oleo w/cream cheese. Add milk. Beat in sugar and vanilla. Stir in 1-3/4 c. coconut. Spread on cake and sprinkle w/remaining coconut.
