Squash Casserole Recipe

4 c. summer squash-cooked until tender-drain
1 c. sour cream
1 med onion, chopped
1 med. green pepper, chopped
1 can cream of mushroom soup
Salt & pepper
4 c. buttered corn bread

Directions:
Directions:
Mix together all except the corn bread. Line bottom of greased casserole with about 2 c. cornbread crumbs. Add squash mixture on top. Sprinkle rest of crumbs on top of squash mixture. Bake at 400º for approx. 45 minutes.

This recipe is from Grandma Dwinell. I think that the only reason that dad plants yellow crookneck squash is so he can have this casserole!
An easy way to make the cornbread crumbs, is to melt some margarine and crumble the cornbread into it and stir it around.
