3 eggs
2 c. sugar
1 c. oil
2-2oz. squares chocolate unsweetened (or use 1/2 c. cocoa)
2 c. grated zucchini
1 tsp. vanilla
3 c. flour
1 tsp. salt
1 tsp. cinnamon
1/4 tsp. baking powder
1 tsp. soda
1 c. chopped nuts

Grease and flour 2 9x5" loaf pans. Beat eggs til fluffy. Add sugar, oil, then chocolate, zucchini and vanilla. Put dry ingredients together. Add to egg mixture. Add nuts. Pour into pans. Bake 1 hour 20 minutes or until toothpick comes out clean in 350 oven. Let cool in pans for 10 minutes, then turn out on rack to cook (three smaller pans can be used and bake 45-60 minutes).
