1 head Boston lettuce
1 avacoado, peeled, seeded and cut into cubes
6 cherry tomatoes - halved
6 salted pecans chopped coarsely
goat cheese

Dressing:
2 1/2 Tblsp. Mazola oil
1 1/2 Tblsp. red wine vinegar
1 Tblsp. tarragon vinegar
1 Tblsp. rice wine vinegar
1 1/2 Tblsp. apple cider vinegar
1 tsp. sugar
1/4 tsp. salt and 1/4 tsp. pepper

Directions:

Combine all dressing ingredients and shake well. Cut Boston lettuce in quarters and arrange each quarter on a salad plate. Put a quarter of the avocado cubes, tomato halves and chopped pecans on each plate of lettuce. Crumble goat cheese over each salad and sprinkle liberally with dressing.
