2 large eggs
2 c. sugar
1/2 c. vegetable oil
1 tsp. vanilla
2 c. flour
1/2 tsp. salt
1 tsp. soda
2 tsp. cinnamon
1/4 tsp. nutmeg
4 c. tart peeled and chopped apples
1 cup chopped nuts (optional)

ICING:
1/3 oz. size softened cream cheese
3 T. oleo or crisco
Pinch of salt
1/2 tsp. vanilla
1-1/2 c. powdered sugar
Directions:
Directions:
Beat eggs until light and fluffy. Gradually add sugar, oil, and vanilla. Sift together four, salt, soda, cinnamon, and nutmeg and add to mixture. Stir in apples and nuts. (The batter will be very thick). Bake at 350º in 9x13 pan for about 45 minutes or until toothpick inserted in middle comes out clean. Cool and add icing.
