1 beef tongue
1 medium onion chopped
3 garlics minced
3 green onions chopped
2 bay leaves
3 tbsp. chopped parsley
2 tbsp. butter or olive oil
2 tbsp. corn starch
2 tbsp. of red wine
dash pepper
salt to taste

Directions:
Directions:
Place the tongue in a heavy pot in enough water to cover the meat and bring to a soft boil (until the skin can be easily removed - not totally cooked). Remove the tongue from the pan and Cool. Throw out this liquid. Remove the skin with a sharp knife. Place the tongue again in a pot with enough water to cover, add salt, laurel leaves, 2 garlic cloves, and half of the onion. Cook until tender. A pressure cooker can be used to reduce the cooking time. Remove the tongue and slice in rounds.
Sauté the remaining onion and garlic in butter or oil until soft. Mix the cornstarch with 2 tbsp. water and add to to the onion garlic mixture. Add one cup of the tongue liquid (or more as needed) to this mixture and cook until the broth is thick and clear. Mix the tongue and broth mixture together and cook for 10 minutes. Add parsley. Serve over rice.

This dish is outstanding (for those of us who like tongue)! When my children visit, Isabel HAS to prepare lengua. I Usually serve with parsley rice.
