1 bunch watercress or bag of baby spinach
2 large vine ripened tomatoes peeled
1 to 2 buffalo mozzarella balls
1/2 container fresh basil
1/4 cup extra birgin olice oil
1/8 cup balsamic vinegar

Directions:
Directions:
Place watercress or spinach on bottom of serving dish. Next slice tomatoes into 1/2 inch slices and place on serving dish on top of greens with slices of mozzarella (1/4 inch slices) on top of tomatoes. Then snip basil with kitchen sheers over slices. Arrange slices so they overlap each other a little. Finally before serving drizzle olive oil over slices then pour the balsamic vinegar over just before serving. Grind fresh cracked pepper after adding vinegar.
