1/3 cup butter
1 TBLS olive oil
1 1/2 to 2 pounds large shrimp, peeled and deveined
4 to 6 medium cloves garlic, crushed
1/3 cup chopped fresh parsley
2 TBLS dry sherry or white wine
1/2 cup heavy cream

Directions:
Directions:
In a large skillet, heat butter and olive oil over medium heat until butter stops foaming, about 30 to 45 seconds. Add smashed garlic and saute 5 minutes or until garil browns. Remove garlic and discard.

Season shrimp with salt and pepper to taste. Add shrimp to butter and olive oil mixture and sauté over medium heat, turning frequently until the shrimp just turn pink, about 4 to 5 minutes.

Add sherry and simmer for 1 minute. Add cream and simmer for 1 more minute.

Garnish with chopped parsley.
