2 pounds small white onions
1/4 cup butter or margarine
1/4 cup flour
2 cups milk, heated, but not boiled
1/4 teaspoon salt
1/4 teaspoon pepper
1 heaping cup shredded sharp cheese
1/4 cup chopped & drained pimento
1/4 cup chopped parsley
1/2 cup buttered bread crumbs

Directions:
Place cooked onions in 1 1/2 quart pan.

For sauce: Melt butter in pan. Add flour slowly and blend until smooth. Cook 3 minutes, stirring constantly. Add warm milk to flour mixture, stirring. Bring just to boil and cook 5 minutes, stirring constantly with wire whip. (Do not boil hard, just a slow boil.) Add salt, pepper and grated cheese. Add pimento and parsley, mixing well.

Pour into casserole (Use Pam before adding onion mixture). Melt 1 tablespoon margarine or butter, add bread crumbs. Sprinkle over casserole and bake at 375º for 15 minutes.
