2 c. flour
1/2 c. cornmeal
2 tbsp. salt
2 tbsp. dry mustard
2 tbsp. paprika
2 tbsp. garlic salt
1 tbsp. celery salt
1 tbsp. pepper
1 tsp. ginger
1/2 tsp. thyme
1/2 tsp. oregano
1 fryer chicken, cut up

Combine all ingredients except chicken. Place about 1 c. flour mixture in a plastic bag. Shake a few chicken pieces at a time in the bag, coating well. On medium high heat, heat 1/4" of oil in a large skillet. Brown chicken on all sides. Remove to a large shallow baking pan. Bake uncovered at 350 for 45-50 min. or until done. This makes enough coating for 3 chickens. Store unused mixture in an airtight container.
