1 1/2 cups rice soaked in plenty of water for 2 hours
4 1/4 cups coconut milk
3/4 cups coconut milk (reserve to use at the end)
1 1/2 teaspoons salt
3 cinnamon sticks
2 tablespoons ginger
6 whole cloves
1 1/2 cups sugar
1/2 cup raisins

Directions:
Directions:
Combine the 4 1/2 cups of coconut milk, salt, cinnamon sticks, ginger and cloves in a medium pot. Bring to a boil over high heat. Reduce heat to medium, cover and boil for 15 minutes.

Drain rice thoroughly and stir into the pot. Bring to a boil over medium heat and then reduce the heat to low and cook until rice is completely dry without stirring.

Stir in the sugar and raisins and bring to a boil over medium heat. Reduce heat to low and cook for another 15 minutes without stirring.

Stir in reserved 3/4 coconut milk. Turn heat back up to medium and boil until the rice dries again. During this cooking period, turn rice over occasionally and scrape the bottom of the pot.

Remove the cinnamon sticks and cloves and spoon rice into a flat pan or serving platter. Allow to cool to room temperature and serve cold.
