1 sm zucchini, grated
1 med uncooked potato, peeled and grated
1 med carrot, grated
1/4 cup grated onion
3/4 cup egg substitute
Pepper to taste

Directions:
Directions:
In a bowl, combine the first 6 ingredients; mix well. Pour about 1/2 cup batter onto a hot griddle lightly coated with nonstick cooking spray. Fry 2-3 minutes on each side or until golden brown.
Suit your taste by including more of the vegetables you like or leave out ones you don’t. Try a dash of garlic powder, peppers or mushrooms.
