2-1/3 C heavy cream
2/3 C milk
1/4 C granulated sugar
3 whole eggs
3 egg yolks
1 t vanilla extract
3/4 C light brown sugar

1. Preheat oven to 300
2. Heat cream, milk and sugar to almost boiling
3. In another bowl beat eggs and egg yolks together well
4. Add the heated milk mixture to the eggs and return to the saucepan
5. Cook over medium heat, stirring with wooden spoon until custard coats the back of the spoon (about 3-4 minutes). Remove from heat and stir in vanilla.
6. Pour into individual custard dishes. Set the dishes into a larger pan on the middle rack of the oven. Fill the pan with hot water to the level of the custard dishes.
7. Bake 35-45 minutes until custard is set. Remove from oven, cover and chill.
8. To serve, top with brown sugar, broil just until browned and serve immediately.
