2 cups sugar
3 cups flour
3 cups chopped apples (peeled) Granny Smith Apples work well
1 teaspoon baking soda
2 teaspoons ground cinnamon
1 cup chopped pecans or walnuts
1 teaspoon salt

Directions:
Directions:
Mix all ingredients together in a large mixing bowl.

Pour in:

• 1-1/4 cups vegetable oil

• 2 eggs

• 2 teaspoons vanilla

Mix well. Pour into 2 greased loaf pans (or a large square pan) and bake for 1 hour at 350 degrees. Remove from the oven and let cool before slicing to serve. This is best on the second day. After it cools on a rack cover it in plastic wrap and
it is great served warm or the second day it is even more moist
