2 cups chopped onion
1.5 cups chopped green pepper
1 15 oz can tomatoes, cut up
3/4 cup picante sauce
minced garlic
2 tsp. ground cumin
2 15 oz cans black or kidney beans, drained
12 corn tortillas (6 inch)
2 cups shredded lowfat cheese
optional:
2 medium tomatoes
2 cups shredded lettuce
sliced green onions
sour cream (nonfat)

In a large skillet combine onion, green pepper, undrained tomatoes, picante sauce, garlic and cumin. Bring to boiling and reduce heat. Simmer uncovered for 10 minutes. Stir in beans. In a 13x6x2 baking pan spread 1/3 of the bean mixture over the bottom. Top with half of the tortillas overlapping as necessary and half of the cheese. Add another 1/3 of the bean mixture, then remaining tortillas with bean mixture on top. Cover and bake in a 350 degree oven for 30 - 35 minutes. Sprinkle with remaining cheese.
Let stand for 10 minutes before serving. May serve with optional fresh ingredients.

Rick's mother, Grace, made this "healthy" casserole for us after she got it from a friend who was on a restricted diet. It's a hearty, meatless meal.
