1. put a cup of flour in a big bowl along with 3 spoons full of sugar and a pinch of salt
2. in a little bowl beat 3 eggs with a fork, add 2 cups of milk, mix
3. put the milk and eggs in the big bowl with the flour and sugar and salt and mix with a spoon
4. add a spoonful of oil
5. let the batter rest for 2 hours! :( !
6. heat up pan and put butter on it and make like a pancake

I discovered Tacy's handwritten crepes recipe (circa 1988, age 10) in one of my cookbooks. This recipe came from Madame Tolman, Tacy's French teacher at Rowland Hall-St. Mark's from first through sixth grades. Madame Tolman taught the children not only the French language but also French cooking and impeccable table manners. The crepes can be made into a main dish or a dessert depending upon the filling you choose.
