2 c. sugar
1 c. oil
3 eggs beaten
3 c. flour
2 tsp. vanilla
3 c. chopped apples
1 c. chopped nuts
1 tsp. salt
1 tsp. cinnamon
1 tsp. baking soda

Directions:
Directions:
Preheat oven to 350 degrees.

Mix by hand.

Mix dry ingredients together. Mix oil, eggs and vanilla. Stir mixtures together. Add apples and nuts. Split mixture into two loaf pans. Sprinkle with sugar and bake at 350 degrees for 1 hour.

Use cooking apples that do not fall apart. Granny Smith's are great.
