Strawberry Rhubarb Coffee Cake Recipe

3 c. rhubarb
1 quart strawberries
2 T. lemon juice
1/3 c. corn starch
1 c. sugar
Cake Ingredients:
3 c. flour
1 c. sugar
1 t. baking powder
1/2 t. baking soda
1 t. vanilla
1 c. butter
2 eggs
1 1/2 c. buttermilk
1/4 c. butter
3/4 c. flour
3/4 c. sugar

Cut rhubarb in 1 inch pieces and smash strawberries. Combine with lemon juice in a sauce pan and cover and cook over low heat for 5 minutes. Combine sugar and cornstarch; stir into saucepan and bring to a boil until thickened . Set aside. Combine flour, sugar, baking powder, soda and salt; cut in butter until it becomes coarse crumbs. Beat buttermilk, eggs and vanilla and stir into crumb mixture. Spread 1/2 the batter into greased 9x13 pan. Spread filling on top. Drop remaining batter by tablespoons over filling. For topping: melt butter over low heat; stir in flour and sugar until mixture resembles coarse crumbs. Sprinkle over batter and bake @ 350 for 40-45 minutes. Cool in pan.
