Four (4-oz) sole fillets
2 tbsp unsweetened grapefruit juice
1 tsp canola oil
1 tbsp white wine or worcestershire sauce
1/4 tsp dried whole tarragon
1/4 tsp paprika
1 c grapefruit sections
2 tsp minced chives

Directions:
Directions:
Arrange fillets in a single layer 13-x9-x2-inch baking dish.Combine juice, canola oil, wine and tarragon, stir well and pour over fillets. Turn fillets over to coat well. Cover and marinate in the fridge for 15 minutes. Bake, uncovered at 400º for 5 minutes. Arrange grapefruit sections over fillets; bake an additional 5 minutes or till fish flakes away easily when tested with a fork. Carefully place fillets on a platter. Spoon pan juices over fillets and garnish with minced chives.
