Dot’s Zucchini Bread
2 Cups Zucchini (Finely Chopped)
1 Cup Canola Oil
3 Eggs
1 Cup Chopped Nuts
1 Tsp. Baking Soda
1 Tsp. Salt
1 Tsp. Baking Powder
1 Tsp. Cinnamon
½ Tsp. Nutmeg
2 Cups Sugar
2 Tsp Vanilla
3 Cups Flour

Bake at 325º for 1 hour. Makes 2 or 3 loaves.

Mom's zuchini bread recipe from way back. I'd like a dollar for every time I made this over the years. We always had lots of zuchini, these 2 cups didn't make a dent in it!!
