1 pound lean ground beef
1 c. diced onion
2 cans red kidney beans (rinsed and drained)
2 cups tomato juice
2 tbsp Worcestershire sauce
1 t oregano
1 t cumin
1 t thyme
2 cloves garlic (optional)
Salt and pepper to taste

4-5 white potatoes, quartered and boiled

Directions:
Directions:
Brown hamburger with onion, spices, Worcestershire and salt and pepper. Add tomato juice and red beans. Simmer about 15 minutes.
Meanwhile, boil potatoes and serve red bean hash over boiled potatoes.

This recipe came from my dad's family. He used to gather us around while he cooked dinner at night and tell us stories. Often the inspiration for his dinner was something he had been reading that day. "Here we are, just like Ernest Hemingway, eating beans by the fire."
