Refrigerator Bran Muffins Recipe

3 cups all bran cereal
1 cup boiling water
2 cups buttermilk
1/2 cup shortening (part margarine)
1 1/4 cup sugar
2 eggs
2 1/2 cups sifted flour
1 cup raisins
2 1/2 teaspoons baking soda
1/4 teaspoon salt

Combine cereal and boiling water, let stand 5 minutes. Add buttermilk.
Cream shortening, sugar and add eggs. Stir in raisins, mixing well. Sift flour, salt and baking soda together. Combine with other ingredients. Stir until just blended. Bake at 350 about 15 minutes or till done.
This is a large recipe. Gram likes to make just a few (1/2 to a doz) at a time. Batter can be stored in refridgerator up to 6 weeks (do not freeze batter). Muffins can be frozen.
